Enginarli Ispanakli Tavuk Pidesi – Chicken Pide With Artichokes and Spinach

Pide is Turkish pizza. If you’re looking for ways to incorporate artichokes into your diet and don’t know how, here’s a free-of-guilt way of eating pizza, ooppps sorry, I was supposed to say, “here’s a healthy dinner recipe” instead.

Ingredients for the sauce:

1 tablespoon of tomato paste

1/4 cup of water

1/4 cup of olive oil

A pinch of salt

Topping ingredients:

2-3 artichoke hearts, medium or large size, boiled in salted water and lemon juice and chopped in cubes

6-7 large leaves of spinach, coarsely chopped and stir fried for a few minutes

300 grs of chicken, julienne (long thin slices), stir fried for a few minutes

1 cup of mozarella cheese

1/2 cup of Parmesan

For the pide / pizza dough:

2 cups of flour, sifted

1 teaspoon of instant rising / baker’s / rapid rise  yeast

1/2 cup of warm water

1/2 cup of olive oil

2 heaped teaspoons of sugar

1 leveled teaspoon of salt

1 teaspoon of dried basil (optional)

1 teaspoon of powdered garlic (optional)

1 teaspoon of red pepper flakes (optional)

Mix the dough ingredients, knead the dough for 5-10 minutes, the more the merrier. Cover and leave aside for 20 minutes.

Meanwhile prepare the topping ingredients, that is, boil and chop the artichokes, stir fry the chicken and spinach.

Mix the sauce ingredients.

Knead the dough into a round or square shaped pizza base of the thickness you prefer. Place it onto the floured and greased pizza stone, or a shallow baking tray (preferably pre-heated in the oven). With a toothpick or tip of a fork, make a few holes on the pizza/pide base. Brush with the tomato sauce you prepared beforehand.

Distribute the toppings evenly, in this following order: Spinach, artichokes, chicken and cheese.

Bake it in the oven at 180 degrees Celcius, for about half an hour, preferably in pizza baking mode of your oven. Check regularly to see if it’s done. Sprinkle some parmesan over before serving. Bon Appetit.
