Pide – Turkish Pizza With Various Toppings

Nothing delicate or sophisticated, just simple, cheerful, comfy and filling. This is what pide is or Turkish Pizza in other words. This archaic way of combining a hearty dough base and meaty, cheesy or vegetarian toppings is divine, especially when it meets the goodness of a wood oven. Still tastes great even if you do not have access to a wood oven.

By the way, Ramadan starts tomorrow. I am planning to throw several dinner parties for friends and family, seems so hard  though, considering the weather and long hot days of fasting ahead…

Back to our recipe… This one in the pictures were made by me and my cousin Birsel in the weekend at my parents’ place and enjoyed by around 15 people. I’ve adjusted the recipe to 4-5 people. In case you have any left overs, you can reheat them in the oven, on the stove in a pan with the lid on or just in a microwave. They are good for breakfast as well.

Ingredients (for the base)

2 teaspoons (7-10g/1 sachet) active dry yeast -instant easy blend yeast

2 teaspoons sugar

100ml (1/2 cup) lukewarm water

100ml full fat milk

~ 3 cups plain flour

1 teaspoon salt

1/4 cup olive oil

1 tablespoon of vinegar

Cheese Topping:

1/2 cup of cottage cheese or ricotta

1/4 cup of cream

1/2 cup of shredded cheddar or mozzarella cheese

1 egg, lightly whisked (optional but highly recommended)

Chicken Topping:

200 grs of chicken meat, julienne, cooked

1/2 cup of shredded cheese

2 yellow peppers chopped and slightly sauteed

A pinch of salt

Minced Beef Topping

200 grs of minced beef

1 onion finely chopped or grated

1 clove of garlic, crushed

1 tomato, peeled and chopped

A dash of salt and black pepper

1 egg, lightly whisked

Mix the dough ingredients. Knead it until soft and chewy for about 5 minutes. Cover with plastic wrap and let it sit in room temperature for about half an hour. When the dough has raised to almost twice its original size, knead once again, then divide it into 4-6 patties and roll them into flat thin(2 mm) rectangular or elongated oval sheets. Spread the toppings onto these and crimp up the edges 1-2 cms, brush the sides with oil. Bake for about 20 minutes in 200 degrees Celsius oven. Once cooked, cut your pide into diagonal slices and serve with a green salad and ayran, a drink made of yogurt, cold water and salt.
