Yumurtali Ispanak – Eggs With Spinach

It’s good for you, it’s green, leafy, crispy and aromatic. It releases its aroma when heated. Turks like it with yogurt, nutrition experts advice against this as yogurt will block the absorption of iron in spinach. If you wash, drain and prepare spinach leaves beforehand, eggs with spinach recipe serves as a very quick and fulfilling lunch or dinner, a very healthy option indeed. Here comes one of the most homely, motherly recipe of Turkish cuisine.

Ingredients

3 tablespoons of butter

1 medium size onion, chopped finely

1/2 kg spinach leaves, washed, drained and chopped into 1 inch pieces

1/4 teaspoon of salt

1/2 teaspoon red pepper flakes

Su Boregi – Turkish Cheese Lasagna

This borek is very famous all-over Turkey, especially in the Black Sea Region, in the north. The crispy outer layers, squeaky soft layers of lasagna-like sheets, warm and melting cheese taste in-between might be the reason for its popularity. Store-bought versions are also available in Turkey and those are nothing short of being delicious, but home-made borek with the finest ingredients is always better IMHO.

So many people are intimidated by the idea of making pasta from scratch. If you can find semolina flour, it makes the process a lot easier and affects the outcome quite positively.  To get semolina flour you’ll look for ‘semola di grano duro’. Also, flour types made from the harder wheat grains are very much suitable for this borek recipe. The harder the wheat that flour is made from, the more protein and gluten it contains. Harder flour types are good for making this borek as the pastry sheets will be boiled.

Cilbir – Poached Eggs In Garlic Yogurt

Ever eaten ice-cream with a fork and a knife? I am just back from a 5-day trip to my dad’s hometown in Kahramanmaras, in the Mediterranean Region of Turkey and that’s how they eat gelato there. Kahramanmaras ice-cream includes dried orchid roots and goat’s milk as its main ingredients, is very hard and does not melt easily. The best way to eat it is with a knife and a fork.
